3 Hearty Soup Recipes for Fall

Warm Up Your Belly With These Festive Soups

As the temperature outside begins to cool down, nothing says warmth and comfort more than a bowl of hearty soup. It's simple, yet filling and hits you in the spot. We list some of our favorite healthy soup recipes to warm you up this festive season.

1. Fresh Tomato Soup

When someone says comfort food, tomato soup immediately comes to mind. This recipe is the best soup to greet the fall season as it utilizes summer's tomato harvest! It's fresh, healthy, and easy to make.

What you'll need:

2 cups low sodium chicken broth
1 cup chopped onion
3/4 cup chopped celery
1 tbsp. chopped fresh basil, divided
1 tbsp. tomato paste
2 lbs. plum tomatoes, cut into wedges
6 tbsp. plain low-fat or greek yogurt
1/2 tsp. salt
1/4 tsp. ground black pepper
Additional chopped basil as garnish

Combine first six ingredients in a large saucepan and bring to a boil. Reduce heat, and simmer for 30 minutes.

Place your tomato mixture in a blender and add in the yogurt. Blend until silky smooth. You may divide your mixture and your yogurt into two batches if your blender is not big enough.

Stir in salt and pepper. Ladle into bowls and top with extra yogurt and basil. Pair this up with a healthy grilled goat cheese sandwich and you'll be chasing your worries away.

2. Classic Chicken Noodle Soup

Chicken noodle soup is like a good friend whose warm hug easily melts away the coldness in our hearts. This soup is not just great when you're nursing a flu, it's also a filling soup that is perfect for fall weather.

What you'll need:

4 and 1/2 cups low-sodium chicken broth
1 cup chopped onion
1 cup chopped carrot
1 cup chopped celery
1 tsp. dried basil
1 tsp. dried oregano
1/4 tsp. ground black pepper
1 bay leaf
1 and 1/2 cups dried egg noodles or any pasta
2 cups chopped, cooked chicken

Combine first eight ingredients into a large pot and bring to boil. Cover and simmer for five minutes. Add the egg noodles or pasta. Cover and simmer for eight minutes. Remove cover and discard the bay leaf. Add cooked chicken breast and stir. Ladle soup into bowls and let the flavors soothe your body and soul.

Fall soups will never be complete without the season's favorite flavor: pumpkin! Aside from its great taste, pumpkin has several health benefits as well. This soup recipe is no different as it is low in salt, dairy-free, and vegan-friendly.

What you'll need:

3/4 cup water, divided
1 small chopped onion
15 oz. pumpkin puree
2 cups low-sodium vegetable broth
1/2 tsp. ground cinnamon
1/4 tsp.n ground nutmeg
1 cup coconut milk
1/8 tsp. ground black pepper
Chopped green onion as garnish

Heat 1/4 cup water over medium heat in a large pot. Add the onion and cook for about three minutes or until tender. Add the rest of the water, along with the pumpkin, broth, cinnamon, and nutmeg.

Bring to a boil and reduce heat. Simmer for five minutes. Gently stir in the coconut milk and cook until hot, but not boiling. Ladle into bowls and garnish with black pepper and green onion.
